Delnay’s Incredible Eggs!

Made this a few days ago. Was so good I wanted to write it down somewhere. Beware: about 600 calories.

  • 2 scrambled eggs in small skillet
  • 1 whole Roma tomato chopped
  • 2-3 sweet peppers (small kind)
  • Chopped ham (I like thick honey glazed)

Cook all of this in with 2 scrambled eggs in a small skillet. Flip when one side is done to your liking. Cook until both sides are done and it is somewhat firm. Remove from skillet and add a layer of mozzarella cheese and chopped thin bacon. Chop up an avocado and spread over it the whole thing. Enjoy!

Snowing Today

It’s snowing in KY today. Funny how roads are too treacherous for school, but  parents apparently have no problems driving to the popular sledding hills, restaurants, cinemas & shopping malls. Just sayin.
