Made this a few days ago. Was so good I wanted to write it down somewhere. Beware: about 600 calories.
- 2 scrambled eggs in small skillet
- 1 whole Roma tomato chopped
- 2-3 sweet peppers (small kind)
- Chopped ham (I like thick honey glazed)
Cook all of this in with 2 scrambled eggs in a small skillet. Flip when one side is done to your liking. Cook until both sides are done and it is somewhat firm. Remove from skillet and add a layer of mozzarella cheese and chopped thin bacon. Chop up an avocado and spread over it the whole thing. Enjoy!
